Add Color and Flavor to Your Organic Garden with Edible Flowers

There are many common garden flowers that are edible and even tasty. Flowers are rich in nectar and pollen, and some are high in vitamins and minerals. For instance, roses—especially rose hips—are very high in vitamin C, marigolds and nasturtiums contain vitamin C, and dandelion blossoms contain vitamins A and C. My personal favorites are nasturtiums and chive flowers.

Edible flowers should be picked as fully open flowers in the cool of the day, after the dew has evaporated. It is best to sample several flowers before harvesting. Flowers grown in different locations can have different tastes, because of different soil types, fertilization, and environmental conditions.

Some flowers are are toxic, so don't eat any flower unless you are certain about its identity. People allergic to pollen or those with asthma should remove the pistils and stamen of flowers before eating

Use flowers that are grown organically.

Suburban development often includes vast energy dependant monocultures (perfect, grass lawns). They consume a significant amount of natural resources, (water to keep them green and gasoline to keep them trimmed), and they reduce the amount of habitat available for native wildlife. Over use of fertilizers, herbicides and pesticides can leach into water supplies and be harmful to children and pets. Trends toward ecological landscaping and organic lawn care are lessening the detrimental effects of these designs.
